I am a blue cheese DOP cow's milk produced in Northern Italy, between Lombardy and Piedmont. Tinged with blue cheese means noble rot, and therefore edible, which is why I am also called by his friends "green cheese". My forms are low cylinder, wrapped in aluminum foil stamped with the "G" of my Consortium, and I can mature from 2 up to 4 months
