Guignolet is undoubtedly the most popular cherry-based liqueur in France. The sour cherries (SCHATTEN-MORELEN, MONTMORENCY ), and the black cherries (EDELFINGEN, BURLAT) are put to macerate separately with their skins and stones in extra fine alcohol. After a number of weeks in the dark coolness of the tanks, the fruit has impregnated the liquid with its aroma and colour. Guignolet is then obtained though the subtle blend of the two infusions and sugar, releasing a fruity and refined aroma coming from the fruit pulp and a shade of stone.
