SPECIALITY EGG PASTA made with MONOVARIETAL DURUM WHEAT "SENATORE CAPELLI" Cultivated on the rolling hills of our very own property in Le Marche, this rare variety of durum wheat reaches up to 1.70 metres in height at maturity. As such, it is not commonly found in our region, being a difficult grain to bring to harvest. This low-gluten pasta has a high protein content, making it ideal for all dishes with rich pasta sauces.
