A 30 year old family-owned dairy farm producing bio certified: milk, cheese and geographically protected cottage cheese products. All our products are certified by Organic Agriculture Europe.
We have been farming animals and producing milk since 1993. Our herd (270-300 cows) is 100% pure Estonian red breed dairy cows that guarantee us the highest quality of raw milk. Our production is 10 meters from the barn. This means our supply chain can't get any shorter. Super fresh milk and less contact with supply chain surfaces = better product.
Animal wellbeing is the core of everything we do. Our cows are free range and even during winter time they are free to mingle around the barn as they please. Thanks to the DeLaval milking robots the production takes place when the cows feel like milking. Beginning of each milking the smart technology will assess the health of each animal as well the quality of the milk. This will enable us the best possible animal health care and fastest health concerns response.
Our farming and production is high-tech, what we mean by that is: smart milking robots, our energy is produced by our own solar farm and hydroelectric power plant and the next short-term goal is to go fossil fuel free by changing out all our fossil fuel based farming machinery.

• For our cheeses we do not use any „industrial made“ milk cultures since we still know the traditional way of excerting the milk cultures out of our own milk. This is a skill barely known anymore and it makes the taste of Baldauf cheese very unique.
• All of our farmers are located in the “Alp mountain region” just arround the corner. Each farmer has in average only 35 cows and we know each of them personally. All of the cows are running arround freely on the pasture.

By the year 2000, we transitioned into industrial production, pushing our boundaries and scaling our production capacity from a humble 1-2 tons to an impressive hundred tons every month. As a result, we were able to process a remarkable 300 tons per month, setting the stage for our ascent in the industry.
In 2007, we embarked on a pioneering venture, introducing our first gluten-free pasta to the market. Motivated by a vision to provide healthy and high-quality pasta made entirely from corn at an affordable price, we focused on the overall health benefits of corn pasta, capturing the attention of health-conscious consumers.
The year 2008 witnessed another significant stride as we expanded the production capacity of our corn mill to an astounding 500 tons per day, solidifying our position as the largest corn mill in Eastern Europe at that time.
A momentous achievement came in 2010 when Sam Mills penetrated the American market, marking a historic milestone for Romanian pasta brands. We not only established a strong presence in the private label industry in the USA but also expanded our reach to the markets of the US, Australia, and Europe.
